Our commitment:

Through a very high standard quality policy, we are committed to running our business according to the regulations (European Directive 93/94) of the HACCP charter on Food Safety.

The HACCP plans consists of a succession of measures, such a, among others, listing all the potential dangers encountered in the food process, or in this case, the wine making process; identifying the critical control points; establishing critical control point monitoring requirements; and establishing record keeping procedures.

Today, our production activity, under our responsibility, respects the Charter of Good Agricultural Practices, as well as strict hygiene rules and correct use of phytosanitary products.

Fragmented Selection:

Our work is based on fragmented selection. After years spent studying our vineyard, we managed to select a few pieces of land. These plots of land produce little but are naturally resistant to our main parasites (mildew / powdery mildew) and are at the heart of our ideas.

« Lutte raisonnée » or Supervised control

This type of cultivation is not an easy choice. It is very complex because it works on the principle of interaction.A supervised control system takes into consideration the environment. The main aim of this system is to reduce the usage of pesticides in order to protect the environment.

Our business goes even further: for the last two years we have been using 100% organic chemicals to fight mildew. Our vineyard is not yet considered organic but it may become so in the future.

The ideal maturity

Our experience has taught us that there are multiple levels of maturity: physiologic, viticultural, phenologic, aromatic, phenolic, climatic, mediatic and oenologic.

The ideal maturity is unattainable (by nature?) but experience has shown that we can get closer to it by observing, measuring, and analysing each grape-harvest and plot of land.

This allows us to convert into wine ripe and healthy grapes, as well as grapes lacking an herbaceous character. This produces wine with characteristic aromas and a balanced taste and the richness of the grape is revealed.
